California Dreamin.. of this Mango Salad
On my last trip to Southern California, I obviously searched for the best health food restaurants in San Diego I could find (like any normal health food-foodie) I wandered into a tiny cafe and found the most amazing salad with shredded raw beets and a mango lime vinaigrette dressing and I was in LOVE! I had to make it the minute I was back home. I didn’t even know how much I liked raw beets. I had only ever had pickled beets as a child growing up in the South. But raw beets with mango, pineapple, sprouts, tomatoes and bell peppers-it was a fresh, flavor explosion!
Mango Beet Salad
-Lettuce-green leaf or baby mixed green
-Fresh Pineapple chunks
-Fresh Mango slices
-Red bell pepper thinly sliced
-Raw Beets -thinly spiral cut or thinly shredded
-Alfalfa Sprouts
-Cucumber
-Cherry tomatoes
Mango Lime Vinaigrette (makes 1-2 servings depending on how much dressing you like)
-1 large ripe Mango
-juice from 1 lime
-1 T apple cider vinegar or rice wine vinegar
-pinch of salt
-(optional -1/2 tsp of coconut sugar)
-(optional -pinch of fresh chopped cilantro-if you like cilantro) :)
